Spicy Cold Noodles

These spicy cold noodles are a refreshing and flavorful dish perfect for hot summer days.

Ingredients

  • Cilantro - 2 tablespoons, chopped
  • Crushed peanuts - 2 tablespoons
  • Sriracha sauce - 2 teaspoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • Green onions - 2, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Noodles - 8 ounces

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cucumber, carrot, and green onions.
  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and sriracha sauce.
  4. Add the cooked noodles to the bowl with the vegetables and pour the sauce over the top. Toss to combine.
  5. Garnish with crushed peanuts and chopped cilantro.
  6. Serve the spicy cold noodles chilled and enjoy!
