Soba

This refreshing soba noodle salad is packed with fresh vegetables and tossed in a tangy sesame dressing.

Ingredients

  • Salt and pepper - To taste
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime - 1, juiced
  • Toasted sesame seeds - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Green onions - 4, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Soba noodles - 8 ounces

Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, cucumber, carrot, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, salt, and pepper.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Sprinkle with toasted sesame seeds before serving.
