Ingredients

  • Peanuts - 1/4 cup, chopped
  • Cilantro - 1/4 cup, chopped
  • Green onions - 2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Peanut butter - 1/2 cup
  • Spaghetti noodles - 8 ounces

Instructions

  1. Cook the spaghetti noodles according to package instructions. Drain and rinse with cold water to cool them down.
  2. In a mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger to make the peanut sauce.
  3. In a large bowl, combine the cooked noodles, sliced cucumber, julienned carrot, sliced red bell pepper, sliced green onions, chopped cilantro, and chopped peanuts.
  4. Pour the peanut sauce over the noodle and vegetable mixture. Toss well to coat everything evenly.
  5. Chill the dish in the refrigerator for at least 30 minutes to allow the flavors to meld together.
