Soba Salad

A refreshing and healthy soba noodle salad with a tangy Asian dressing.

Ingredients

  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • For the dressing: -
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Red bell pepper - 1, thinly sliced
  • Cucumber - 1, julienned
  • Carrot - 1, julienned
  • Soba noodles - 200 grams

Instructions

  1. Cook the soba noodles according to the package instructions. Rinse under cold water and drain.
  2. In a large bowl, combine the cooked soba noodles, carrot, cucumber, red bell pepper, and green onions.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.
  4. Pour the dressing over the soba noodle mixture and toss to combine.
  5. Sprinkle with sesame seeds before serving.
