Soba Noodle Salad with Edamame

A refreshing and healthy soba noodle salad with edamame and a tangy sesame dressing.

Ingredients

  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • For the dressing: -
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, thinly sliced
  • Carrot - 1, julienned
  • Red bell pepper - 1, thinly sliced
  • Edamame - 1 cup, shelled and cooked
  • Soba noodles - 8 ounces

Instructions

  1. Cook the soba noodles according to the package instructions. Rinse under cold water and drain.
  2. In a large bowl, combine the cooked noodles, edamame, bell pepper, carrot, and green onions.
  3. To make the dressing, whisk together the sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger in a small bowl.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Sprinkle with sesame seeds before serving.
