Ingredients

  • Crushed red pepper flakes - To taste
  • Salt - To taste
  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime - 1, juiced
  • Roasted peanuts - 1/4 cup, chopped
  • Green onions - 2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Fresh basil leaves - 1 cup, chopped
  • Soba noodles - 6 ounces

Instructions

  1. Cook the soba noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, chopped basil, cucumber, carrot, red bell pepper, green onions, and chopped peanuts.
  3. In a separate small bowl, whisk together the lime juice, soy sauce, peanut butter, rice vinegar, honey, minced garlic, grated ginger, sesame oil, salt, and crushed red pepper flakes.
  4. Pour the peanut sauce over the noodle mixture and toss until well coated.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
