Soba Noodle Salad

This refreshing soba noodle salad is perfect for a light lunch or dinner. It's packed with fresh veggies and tossed in a tangy sesame dressing.

Ingredients

  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Honey - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • Sesame seeds - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Green onions - 4, thinly sliced
  • Red bell pepper - 1, seeded and julienned
  • Cucumber - 1, seeded and julienned
  • Carrots - 2, peeled and julienned
  • Soba noodles - 8 ounces

Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked soba noodles, carrots, cucumber, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the sesame seeds, sesame oil, rice vinegar, soy sauce, honey, garlic, and ginger.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve chilled.
