Veggie Soba Noodles

This delicious and healthy veggie soba noodles recipe is packed with fresh vegetables and tossed in a flavorful sauce.

Ingredients

  • Sesame seeds - 1 tablespoon, for garnish
  • Honey - 1 tablespoon
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 2 tablespoons
  • Green onions - 2, sliced
  • Snow peas - 1/2 cup
  • Red bell pepper - 1, thinly sliced
  • Carrots - 1 large, julienned
  • Broccoli florets - 1 cup
  • Soba noodles - 6 ounces

Instructions

  1. Cook the soba noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat the sesame oil over medium heat.
  3. Add the garlic and ginger and cook for 1 minute until fragrant.
  4. Add the broccoli, carrots, red bell pepper, snow peas, and green onions. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, and honey.
  6. Add the cooked soba noodles to the pan and pour the sauce over the noodles and vegetables. Toss to coat everything evenly.
  7. Cook for an additional 2 minutes until heated through.
  8. Serve the veggie soba noodles hot, garnished with sesame seeds.
