Shrimp Salad

This refreshing shrimp salad is packed with juicy shrimp, crisp vegetables, and a tangy dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Avocado - 1, diced
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Lettuce - 4 cups, torn
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. Bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until pink and cooked through. Drain and set aside.
  2. In a large bowl, combine the lettuce, cherry tomatoes, cucumber, red onion, and avocado.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the dressing.
  4. Add the cooked shrimp to the salad and drizzle with the dressing. Toss to combine.
  5. Serve the shrimp salad chilled and enjoy!
