Salmon Salad

This refreshing salmon salad is packed with healthy ingredients and bursting with flavor.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Avocado - 1, sliced
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, sliced
  • Mixed greens - 4 cups
  • Salmon fillets - 2, cooked and flaked

Instructions

  1. In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, red onion, and avocado.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the dressing.
  3. Add the flaked salmon to the salad and drizzle with the dressing.
  4. Toss gently to combine all the ingredients.
