Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Avocado - 1, sliced
  • Red onion - 1/4 cup, thinly sliced
  • Purple cabbage - 1 cup, shredded
  • Orange bell pepper - 1, thinly sliced
  • Yellow bell pepper - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrots - 2, shredded
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed greens - 4 cups

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, carrots, bell peppers, purple cabbage, red onion, and avocado.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the dressing.
