Shish Tawook

Shish Tawook is a popular Middle Eastern grilled chicken dish marinated in a flavorful blend of spices and yogurt.

Ingredients

  • Wooden skewers - 8-10
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into chunks
  • Bell peppers - 2, cut into chunks
  • Red pepper flakes - 1/4 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Plain yogurt - 1/2 cup
  • Chicken breast - 1.5 lbs, boneless and skinless

Instructions

  1. In a bowl, combine the yogurt, minced garlic, lemon juice, olive oil, paprika, cumin, coriander, salt, black pepper, and red pepper flakes. Mix well to make the marinade.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade. Make sure all the chicken pieces are coated with the marinade. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken pieces onto the wooden skewers, alternating with chunks of bell peppers, red onion, and cherry tomatoes.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Serve the Shish Tawook skewers with rice, salad, and a side of garlic sauce or tahini sauce.
