Seafood Udon

This delicious seafood udon is a hearty and flavorful Japanese noodle dish packed with a variety of seafood.

Ingredients

  • Salt and pepper - To taste
  • Vegetable oil - 2 tablespoons
  • Chicken broth - 4 cups
  • Fish sauce - 1 tablespoon
  • Mirin - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green onions - 2, sliced
  • Bok choy - 2 baby bok choy, halved
  • Mushrooms - 4 ounces, sliced
  • Fish cake - 4 slices
  • Squid - 8 ounces, cleaned and sliced
  • Scallops - 8 ounces
  • Shrimp - 8 ounces, peeled and deveined
  • Udon noodles - 8 ounces

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Add the shrimp, scallops, squid, and fish cake to the pot. Cook for 2-3 minutes until the seafood is cooked through.
  4. Add the mushrooms, bok choy, and green onions to the pot. Cook for another 2 minutes until the vegetables are slightly tender.
  5. Pour in the chicken broth, soy sauce, mirin, and fish sauce. Bring to a boil, then reduce the heat and simmer for 5 minutes to allow the flavors to meld.
  6. Season with salt and pepper to taste.
  7. Divide the cooked udon noodles into bowls and ladle the seafood and broth over the noodles.
  8. Garnish with additional green onions, if desired.
  9. Serve hot and enjoy!
