Bok Choy and Shrimp Noodle Soup

This flavorful soup combines bok choy, shrimp, and noodles in a delicious broth.

Ingredients

  • Salt and pepper - To taste
  • Red pepper flakes - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Green onions - 4, sliced
  • Rice noodles - 8 ounces, cooked
  • Fish sauce - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Chicken broth - 4 cups
  • Shrimp - 1 pound, peeled and deveined
  • Bok choy - 4 cups, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 2 tablespoons

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the garlic and ginger and cook for 1 minute, until fragrant.
  3. Add the bok choy and cook for 2-3 minutes, until slightly wilted.
  4. Add the shrimp and cook for 2-3 minutes, until pink and cooked through.
  5. Pour in the chicken broth, soy sauce, and fish sauce. Bring to a boil.
  6. Reduce the heat and simmer for 10 minutes to allow the flavors to meld.
  7. Add the cooked rice noodles and green onions to the pot. Cook for an additional 2 minutes.
  8. Remove from heat and stir in the lime juice and chopped cilantro.
  9. Season with salt, pepper, and red pepper flakes to taste.
  10. Serve hot and enjoy!
