Shrimp and Scallop Udon

This delicious shrimp and scallop udon dish is made with thick udon noodles, succulent shrimp and scallops, and a flavorful broth.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Green onions - 2, sliced
  • Chicken broth - 2 cups
  • Fish sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Scallops - 8 ounces
  • Shrimp - 8 ounces, peeled and deveined
  • Udon noodles - 8 ounces

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the garlic and ginger and cook for 1 minute, until fragrant.
  4. Add the shrimp and scallops to the skillet and cook for 2-3 minutes, until they start to turn pink.
  5. In a small bowl, whisk together the soy sauce, mirin, fish sauce, and chicken broth.
  6. Pour the sauce mixture into the skillet with the shrimp and scallops. Bring to a simmer.
  7. Add the cooked udon noodles to the skillet and toss to coat them in the sauce.
  8. Cook for an additional 2-3 minutes, until the noodles are heated through.
  9. Season with salt and black pepper to taste.
  10. Serve the shrimp and scallop udon in bowls, garnished with sliced green onions and a sprinkle of red pepper flakes.
