Salmon Fish Cakes with Tartar Sauce

These salmon fish cakes are crispy on the outside, tender on the inside, and served with a tangy homemade tartar sauce.

Ingredients

  • Salt and pepper - To taste
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 tablespoon
  • Dill pickle - 2 tablespoons, finely chopped
  • Mayonnaise - 1/2 cup
  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Breadcrumbs - 1/2 cup
  • Egg - 1, beaten
  • Lemon zest - 1 teaspoon
  • Fresh dill - 2 tablespoons, chopped
  • Green onions - 2, finely chopped
  • Potatoes - 2 medium, boiled and mashed
  • Salmon fillets - 2 cups, cooked and flaked

Instructions

  1. In a large bowl, combine the cooked and flaked salmon, mashed potatoes, green onions, fresh dill, lemon zest, beaten egg, breadcrumbs, salt, and pepper. Mix well.
  2. Shape the mixture into patties, about 1/2 inch thick.
  3. Heat the vegetable oil in a skillet over medium heat.
  4. Cook the salmon fish cakes for about 4-5 minutes on each side, or until golden brown and crispy.
  5. In a small bowl, mix together the mayonnaise, dill pickle, Dijon mustard, lemon juice, salt, and pepper to make the tartar sauce.
  6. Serve the salmon fish cakes hot with the homemade tartar sauce on the side.
