Salmon Croquettes with Lemon Aioli

These crispy salmon croquettes are served with a tangy lemon aioli sauce.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Mayonnaise - 1/2 cup
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon zest - 1 teaspoon
  • Dill - 1 tablespoon, chopped
  • Green onions - 2, finely chopped
  • Breadcrumbs - 1/2 cup
  • Egg - 1
  • Canned salmon - 14 ounces

Instructions

  1. In a large bowl, combine the canned salmon, egg, breadcrumbs, green onions, dill, lemon zest, salt, and black pepper. Mix well.
  2. Form the mixture into small patties, about 2 inches in diameter.
  3. Heat the vegetable oil in a skillet over medium heat.
  4. Cook the salmon croquettes for 3-4 minutes per side, or until golden brown and crispy.
  5. In a separate bowl, whisk together the mayonnaise, lemon juice, minced garlic, salt, and black pepper to make the lemon aioli sauce.
  6. Serve the salmon croquettes hot with the lemon aioli sauce on the side.
