Salmon and Rice Bowl

This delicious salmon and rice bowl is a healthy and satisfying meal packed with flavors.

Ingredients

  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Carrot - 1, julienned
  • Avocado - 1, sliced
  • Cucumber - 1, thinly sliced
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Cooked rice - 2 cups
  • Salmon fillets - 2

Instructions

  1. Preheat the oven to 400°F.
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and grated ginger.
  4. Brush the salmon fillets with the sauce mixture, reserving some for serving.
  5. Bake the salmon for 12-15 minutes, or until cooked through.
  6. In serving bowls, divide the cooked rice.
  7. Top the rice with cucumber slices, avocado slices, julienned carrot, and chopped green onions.
  8. Place the baked salmon fillets on top of the rice and vegetables.
  9. Drizzle the remaining sauce over the bowl.
  10. Sprinkle with sesame seeds.
  11. Serve and enjoy!
