Bok Choy and Salmon Salad

This refreshing salad combines the flavors of bok choy, grilled salmon, and a tangy Asian-inspired dressing.

Ingredients

  • Salt and pepper - To taste
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Lime - 1, juiced
  • Sesame seeds - 1 tablespoon
  • Green onions - 4, sliced
  • Cucumber - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrots - 1, julienned
  • Bok choy - 4 cups, chopped
  • Salmon fillets - 2

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill the salmon for 4-5 minutes per side, or until cooked through. Set aside to cool.
  4. In a large bowl, combine the bok choy, carrots, red bell pepper, cucumber, and green onions.
  5. In a small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, ginger, garlic, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and toss to coat.
  7. Flake the grilled salmon into bite-sized pieces and add to the salad.
  8. Sprinkle with sesame seeds and serve.
