Rosemary and Goat Cheese Mac and Cheese

A creamy, tangy mac and cheese with the aromatic flavor of rosemary.

Ingredients

  • Salt and pepper - To taste
  • Rosemary - 1 tablespoon, finely chopped
  • Cheddar cheese - 1 cup, shredded
  • Goat cheese - 1 cup, crumbled
  • Milk - 2 cups
  • All - purpose flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Macaroni - 2 cups

Instructions

  1. Cook the macaroni according to the package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
  3. Gradually whisk in the milk. Bring to a simmer, stirring constantly, until the sauce thickens.
  4. Remove the saucepan from the heat. Stir in the goat cheese, cheddar cheese, and rosemary until the cheese is melted and the sauce is smooth.
  5. Season with salt and pepper to taste.
  6. Add the cooked macaroni to the sauce and stir until well coated.
  7. Serve the mac and cheese hot, garnished with extra rosemary if desired.
