Rosemary and Garlic Chicken Skewers

These flavorful chicken skewers are marinated in a rosemary and garlic-infused marinade, then grilled to perfection.

Ingredients

  • Wooden skewers - 8
  • Cherry tomatoes - 12
  • Red onion - 1, cut into chunks
  • Bell peppers - 2, cut into chunks
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 1/4 cup
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. In a bowl, combine the chopped rosemary, minced garlic, olive oil, lemon juice, salt, and black pepper to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and place them in a ziplock bag.
  3. Pour the marinade over the chicken, seal the bag, and massage the marinade into the chicken to coat evenly. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the wooden skewers, alternating between ingredients.
  6. Grill the skewers for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  7. Serve the rosemary and garlic chicken skewers hot, garnished with additional fresh rosemary if desired.
