These Mediterranean grilled chicken skewers are marinated in a flavorful blend of herbs and spices, then grilled to perfection.

Ingredients

  • Wooden skewers - 8
  • Cherry tomatoes - 12
  • Bell peppers - 2, cut into chunks
  • Red onion - 1, cut into chunks
  • Salt and pepper - To taste
  • Smoked paprika - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 1/4 cup
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and pepper. Mix well to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and place them in a ziplock bag or a shallow dish.
  3. Pour the marinade over the chicken and toss to coat. Marinate in the refrigerator for at least 1 hour, or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken pieces onto the wooden skewers, alternating with chunks of red onion, bell peppers, and cherry tomatoes.
