Roasted Vegetable Pizza

This delicious roasted vegetable pizza is topped with a medley of colorful vegetables and melted cheese.

Ingredients

  • Salt and pepper - To taste
  • Parmesan cheese - 1/4 cup, grated
  • Mozzarella cheese - 1 cup, shredded
  • Fresh basil - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Mushrooms - 8 ounces, sliced
  • Red onion - 1, thinly sliced
  • Zucchini - 1, sliced
  • Bell peppers - 1 red, 1 yellow, 1 green, sliced
  • Olive oil - 2 tablespoons
  • Pizza dough - 1 pound

Instructions

  1. Preheat the oven to 425°F.
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the dough to a baking sheet or pizza stone.
  4. Brush the dough with olive oil.
  5. In a large bowl, toss the sliced bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes with olive oil, salt, and pepper.
  6. Spread the vegetable mixture evenly over the pizza dough.
  7. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the vegetables.
  8. Bake for 20-25 minutes, or until the crust is golden and the cheese is melted and bubbly.
  9. Remove from the oven and sprinkle with fresh basil.
  10. Slice and serve hot.
