Roasted Red Pepper and Goat Cheese Omelette

This delicious omelette is filled with roasted red peppers and creamy goat cheese, creating a flavorful and satisfying breakfast or brunch option.

Ingredients

  • Butter - 1 tablespoon
  • Fresh basil - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Milk - 2 tablespoons
  • Eggs - 4
  • Goat cheese - 2 ounces, crumbled
  • Red bell pepper - 1, roasted and sliced

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  2. Heat butter in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and let it cook undisturbed for a few minutes until the edges start to set.
  4. Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked eggs to flow to the edges.
  5. Once the omelette is mostly set but still slightly runny on top, sprinkle the roasted red peppers, goat cheese, and fresh basil over one half of the omelette.
  6. Fold the other half of the omelette over the filling and cook for another minute to melt the cheese.
  7. Slide the omelette onto a plate and serve hot.
