Ingredients

  • Olive oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Milk - 1/4 cup
  • Eggs - 8
  • Goat cheese - 4 ounces, crumbled
  • Bell peppers - 2 medium, thinly sliced

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Add the sliced bell peppers and cook until they are softened, about 5 minutes.
  4. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  5. Pour the egg mixture over the cooked bell peppers in the skillet.
  6. Sprinkle the crumbled goat cheese evenly over the top.
