Roasted Pepper and Mozzarella Omelette

This delicious omelette is filled with roasted peppers and melted mozzarella cheese.

Ingredients

  • Fresh basil - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Black pepper - To taste
  • Salt - To taste
  • Mozzarella cheese - 1/2 cup, shredded
  • Eggs - 4
  • Yellow bell pepper - 1, roasted and sliced
  • Red bell pepper - 1, roasted and sliced

Instructions

  1. In a bowl, beat the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook until the edges start to set.
  4. Sprinkle the roasted pepper slices and shredded mozzarella cheese over one half of the omelette.
  5. Fold the other half of the omelette over the filling and cook for another minute, or until the cheese is melted.
  6. Slide the omelette onto a plate and garnish with fresh basil.
  7. Serve hot and enjoy!
