Ingredients
Green onions - 4, chopped
Salt and pepper - To taste
Sesame oil - 1 tablespoon
Soy sauce - 3 tablespoons
Broccoli florets - 2 cups
Bell peppers - 2, thinly sliced
Carrots - 2, thinly sliced
Ginger - 1 tablespoon, grated
Garlic - 3 cloves, minced
Vegetable oil - 2 tablespoons
Cooked rice - 4 cups
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add minced garlic and grated ginger, and cook for 1 minute until fragrant.
Add sliced carrots, bell peppers, and broccoli florets to the skillet. Stir fry for 5-6 minutes until the vegetables are tender-crisp.
Push the vegetables to one side of the skillet and add the cooked rice to the other side. Drizzle with soy sauce and sesame oil, and season with salt and pepper.
Stir everything together and cook for an additional 2-3 minutes until the rice is heated through.
Remove from heat and garnish with chopped green onions.
