Pinto Bean and Veggie Stir Fry

This healthy and flavorful stir fry is packed with protein from pinto beans and loaded with colorful vegetables.

Ingredients

  • Sesame seeds - 1 tablespoon, for garnish
  • Green onions - 2, sliced, for garnish
  • Cooked rice - 4 cups, for serving
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Broccoli florets - 1 cup
  • Carrots - 2, julienned
  • Zucchini - 1, sliced
  • Bell peppers - 2, thinly sliced
  • Pinto beans - 1 can, drained and rinsed

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger, and sauté for 1 minute until fragrant.
  3. Add bell peppers, zucchini, carrots, and broccoli. Stir fry for 5-6 minutes until vegetables are tender-crisp.
  4. Add pinto beans, soy sauce, red pepper flakes, salt, and pepper. Stir fry for another 2-3 minutes until heated through.
  5. Serve the stir fry over cooked rice.
  6. Garnish with sliced green onions and sesame seeds.
  7. Enjoy!
