This refreshing salad combines the salty flavor of prosciutto with the sweetness of mango for a perfect balance of flavors.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic glaze - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Toasted almonds - 1/4 cup, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Mixed greens - 4 cups
  • Mango - 1, ripe and diced
  • Prosciutto - 4 slices

Instructions

  1. In a large bowl, combine the mixed greens, diced mango, sliced red onion, crumbled feta cheese, chopped toasted almonds, and fresh basil.
  2. In a small bowl, whisk together the balsamic glaze, extra virgin olive oil, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Divide the salad onto plates and top each plate with 2 slices of prosciutto.
  5. Serve immediately and enjoy!
