Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • White wine vinegar - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Prosciutto - 4 slices, thinly sliced
  • Green beans - 1 pound, trimmed

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the green beans, prosciutto, cherry tomatoes, red onion, feta cheese, and fresh basil.
  3. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss to coat evenly.
