Prawn Tacos with Mango Salsa

Ingredients

  • Salt - To taste
  • Lime juice - 2 tablespoons
  • Jalapeno - 1, seeded and minced
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/2, finely chopped
  • Red bell pepper - 1, diced
  • Mango - 1, diced
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Lime - 1, juiced
  • Taco shells - 8
  • Prawns - 1 lb, peeled and deveined

Instructions

  1. In a bowl, combine the prawns, lime juice, minced garlic, cumin, paprika, salt, and pepper. Let marinate for 10 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the prawns for 2-3 minutes per side, until pink and cooked through.
  3. In a separate bowl, combine the diced mango, red bell pepper, red onion, cilantro, jalapeno, lime juice, and salt. Mix well to make the mango salsa.
  4. Warm the taco shells according to package instructions.
  5. Fill each taco shell with cooked prawns and top with mango salsa.
  6. Serve immediately and enjoy!
