Corn and Mango Salsa

This refreshing salsa is made with sweet corn, juicy mango, and a hint of spice.

Ingredients

  • Chili powder - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Jalapeno - 1, seeded and minced
  • Red onion - 1/4 cup, finely chopped
  • Red bell pepper - 1/2 cup, diced
  • Mango - 1 large, diced
  • Corn kernels - 2 cups, cooked

Instructions

  1. In a large bowl, combine the corn, mango, red bell pepper, red onion, jalapeno, and cilantro.
  2. In a small bowl, whisk together the lime juice, salt, cumin, and chili powder.
  3. Pour the dressing over the corn and mango mixture and toss to combine.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled and enjoy as a dip with tortilla chips or as a topping for grilled meats or tacos.
