Prawn and Mango Skewers

These delicious prawn and mango skewers are perfect for summer grilling. The combination of juicy prawns and sweet mangoes creates a burst of flavors in every bite.

Ingredients

  • Skewers - 8, soaked in water
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lime - 1, juiced
  • Red onion - 1, cut into chunks
  • Red bell pepper - 1, cut into chunks
  • Mango - 1 large, ripe, peeled and cubed
  • Prawns - 16 large, peeled and deveined

Instructions

  1. In a bowl, combine the olive oil, minced garlic, lime juice, paprika, salt, and pepper to make the marinade.
  2. Add the prawns to the marinade and toss to coat. Let them marinate for at least 10 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated prawns, mango cubes, red bell pepper chunks, and red onion chunks onto the soaked skewers, alternating between ingredients.
  5. Place the skewers on the preheated grill and cook for about 3-4 minutes per side, or until the prawns are cooked through and slightly charred.
  6. Remove the skewers from the grill and serve hot.
  7. Optional: Garnish with fresh cilantro and serve with a side of lime wedges for squeezing over the skewers.
