Ingredients

  • Salt and pepper - To taste
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Lime - 1, juiced
  • Roasted peanuts - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Spring onions - 2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Prawns - 8 large, peeled and deveined
  • Soba noodles - 6 ounces

Instructions

  1. Cook the soba noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, prawns, cucumber, carrot, red bell pepper, spring onions, cilantro, and roasted peanuts.
  3. In a small bowl, whisk together the lime juice, soy sauce, honey, sesame oil, garlic, ginger, salt, and pepper.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Let the salad sit for 10 minutes to allow the flavors to meld together.
