Prawn and Feta Salad

This refreshing salad combines succulent prawns with tangy feta cheese and crisp vegetables.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/4, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 4 cups
  • Prawns - 200g

Instructions

  1. Cook the prawns in boiling water for 2-3 minutes, or until they turn pink. Drain and set aside.
  2. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and fresh dill.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  4. Add the cooked prawns to the salad and drizzle with the dressing.
  5. Toss gently to combine all the ingredients.
  6. Serve the prawn and feta salad immediately and enjoy!
