Green Bean and Salmon Salad

This refreshing salad combines crisp green beans, flaky salmon, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Kalamata olives - 1/4 cup, pitted and halved
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Salmon fillets - 2, cooked and flaked
  • Green beans - 8 ounces

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook until crisp-tender, about 3-4 minutes. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked green beans, flaked salmon, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh dill.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to coat evenly.
  5. Serve the salad chilled and enjoy!
