This refreshing salad combines the tangy flavors of feta cheese and briny olives with crisp vegetables and a zesty dressing.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Extra virgin olive oil - 2 tablespoons
  • Cucumber - 1/2, sliced
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Kalamata olives - 1/2 cup, pitted
  • Feta cheese - 1 cup, crumbled
  • Mixed salad greens - 4 cups

Instructions

  1. In a large salad bowl, combine the mixed salad greens, feta cheese, Kalamata olives, cherry tomatoes, red onion, and cucumber.
