A delicious and hearty salad featuring pastrami and hard-boiled eggs, perfect for a light lunch or dinner.

Ingredients

  • Salt and pepper - To taste
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Red onion - 1/2, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 4 cups
  • Eggs - 4, hard-boiled and sliced
  • Pastrami - 200 grams, thinly sliced

Instructions

  1. Arrange the salad greens on a large platter.
  2. Top with the sliced pastrami, hard-boiled eggs, cherry tomatoes, cucumber, and red onion.
  3. In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper.
  4. Drizzle the dressing over the salad just before serving.
