Potee de Legumes Dete is a delicious summer vegetable stew made with a variety of fresh vegetables and herbs.

Ingredients

  • Salt and pepper - To taste
  • Bay leaf - 1
  • Fresh thyme - 1 tablespoon, chopped
  • Vegetable broth - 4 cups
  • Tomatoes - 2, diced
  • Green beans - 1 cup, trimmed and halved
  • Zucchini - 2, sliced
  • Potatoes - 2, peeled and diced
  • Carrots - 2, sliced
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the carrots, potatoes, zucchini, green beans, tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
  5. Remove the bay leaf before serving.
  6. Serve hot and enjoy!
