Maneštra

Maneštra is a traditional Istrian vegetable stew made with seasonal vegetables and beans.

Ingredients

  • Salt and pepper - To taste
  • Parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Vegetable broth - 4 cups
  • Beans - 1 cup, cooked
  • Cabbage - 1 cup, shredded
  • Green beans - 1 cup, chopped
  • Tomatoes - 4, diced
  • Zucchini - 2, diced
  • Potatoes - 2, peeled and diced
  • Carrots - 2, diced
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the carrots, potatoes, zucchini, tomatoes, green beans, cabbage, and cooked beans to the pot.
  4. Pour in the vegetable broth and add the bay leaf.
  5. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
  7. Stir in the chopped parsley.
  8. Serve hot and enjoy!
