Pollo Guisado

Pollo Guisado is a traditional Puerto Rican stewed chicken dish, packed with flavor and served with rice and beans.

Ingredients

  • Salt and pepper - To taste
  • Cilantro - 1/4 cup, chopped
  • Olives - 1/2 cup, pitted
  • Carrots - 2 medium, peeled and sliced
  • Potatoes - 2 medium, peeled and diced
  • Sazon seasoning - 1 packet
  • Adobo seasoning - 1 tablespoon
  • Chicken broth - 1 cup
  • Tomato sauce - 1 cup
  • Bell pepper - 1, chopped
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Sofrito - 1/2 cup
  • Chicken - 2 pounds, cut into pieces

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the sofrito, garlic, onion, and bell pepper. Cook until the vegetables are softened.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the tomato sauce, chicken broth, adobo seasoning, sazon seasoning, salt, and pepper.
  5. Cover the pot and simmer for 30 minutes, or until the chicken is cooked through.
  6. Add the diced potatoes, sliced carrots, and olives. Cook for an additional 15 minutes, or until the vegetables are tender.
  7. Garnish with chopped cilantro before serving.
  8. Serve hot with rice and beans.
