Asopao de Pollo

Asopao de Pollo is a traditional Puerto Rican chicken and rice stew, packed with flavor and hearty ingredients.

Ingredients

  • Salt and pepper - To taste
  • Frozen peas - 1 cup
  • Rice - 1 cup
  • Adobo seasoning - 1 tablespoon
  • Sazon seasoning - 1 packet
  • Cilantro - 1/4 cup, chopped
  • Sofrito - 1/4 cup
  • Chicken broth - 4 cups
  • Tomato sauce - 1 cup
  • Green bell pepper - 1, diced
  • Red bell pepper - 1, diced
  • Garlic - 4 cloves, minced
  • Onion - 1 large, chopped
  • Olive oil - 2 tablespoons
  • Chicken - 1 whole, cut into pieces

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, garlic, red bell pepper, and green bell pepper. Cook until the vegetables are softened.
  4. Add the tomato sauce, chicken broth, sofrito, cilantro, sazon seasoning, and adobo seasoning. Stir to combine.
  5. Return the chicken to the pot and bring the mixture to a boil.
  6. Add the rice and frozen peas. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
