Fricase de Pollo

Fricasé de Pollo is a traditional Cuban chicken stew made with chicken, potatoes, and a flavorful tomato-based sauce.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Bay leaf - 1
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Capers - 2 tablespoons
  • Olives - 1/2 cup, pitted
  • Potatoes - 4 medium, peeled and cubed
  • Chicken broth - 2 cups
  • Tomato sauce - 1 cup
  • Bell pepper - 1, chopped
  • Garlic - 4 cloves, minced
  • Onion - 1 large, chopped
  • Chicken - 1 whole chicken, cut into pieces

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
  4. Add the tomato sauce, chicken broth, cumin, oregano, bay leaf, salt, and pepper. Stir to combine.
  5. Return the chicken to the pot and add the potatoes, olives, and capers. Bring to a boil, then reduce the heat to low.
  6. Cover the pot and simmer for 45 minutes, or until the chicken is cooked through and the potatoes are tender.
  7. Remove the bay leaf and garnish with fresh cilantro before serving.
  8. Serve the Fricasé de Pollo hot with rice or crusty bread.
