Fricasé de Pollo

Fricasé de Pollo is a traditional Latin American chicken stew made with chicken, vegetables, and a flavorful tomato-based sauce.

Ingredients

  • Cilantro - 1/4 cup, chopped
  • Green olives - 1/2 cup, pitted
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Bay leaves - 2
  • White wine - 1/2 cup
  • Chicken broth - 2 cups
  • Tomato sauce - 1 cup
  • Potatoes - 4, peeled and cubed
  • Carrots - 2, sliced
  • Bell pepper - 1, chopped
  • Garlic - 4 cloves, minced
  • Onion - 1 large, chopped
  • Chicken - 1.5 kg, cut into pieces

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion, garlic, bell pepper, carrots, and potatoes. Cook until the vegetables are slightly softened.
  4. Return the chicken to the pot and add the tomato sauce, chicken broth, white wine, bay leaves, oregano, cumin, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Add the green olives and cilantro to the pot. Stir well and cook for an additional 5 minutes.
  7. Serve the Fricasé de Pollo hot with rice or crusty bread.
