Pistachio Pesto

This flavorful pistachio pesto is a delicious twist on traditional pesto, made with fresh basil, garlic, Parmesan cheese, and of course, pistachios.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Olive oil - 1/4 cup
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 1/2 cup, grated
  • Garlic - 2 cloves
  • Fresh basil leaves - 2 cups
  • Pistachios - 1 cup, shelled

Instructions

  1. In a food processor, combine the pistachios, basil leaves, garlic, Parmesan cheese, lemon juice, salt, and black pepper.
  2. Pulse until the ingredients are well combined and the mixture has a coarse texture.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the pistachio pesto to a jar or container and refrigerate until ready to use.
  6. Serve the pistachio pesto as a spread on bread, toss with pasta, or use as a sauce for grilled meats or vegetables.
