Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, diced
  • Red bell pepper - 1, diced
  • Pinto beans - 1 can, drained and rinsed
  • Quinoa - 1 cup

Instructions

  1. Cook the quinoa according to package instructions. Once cooked, let it cool.
  2. In a large bowl, combine the cooked quinoa, pinto beans, red bell pepper, cucumber, cherry tomatoes, red onion, and cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
