Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/2 cup, diced
  • Red bell pepper - 1, diced
  • Corn kernels - 1 cup, fresh or frozen
  • Pinto beans - 1 can, drained and rinsed

Instructions

  1. In a large bowl, combine the pinto beans, corn kernels, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, garlic, cumin, salt, and black pepper.
