Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Corn kernels - 1 cup, cooked
  • Red onion - 1/2 cup, diced
  • Green bell pepper - 1, diced
  • Red bell pepper - 1, diced
  • Black beans - 1 can (15 oz), drained and rinsed
  • Pinto beans - 1 can (15 oz), drained and rinsed

Instructions

  1. In a large bowl, combine the pinto beans, black beans, red bell pepper, green bell pepper, red onion, corn kernels, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat evenly.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
