Pesto Country Potatoes

These flavorful potatoes are roasted to perfection and tossed in a homemade pesto sauce for a delicious side dish.

Ingredients

  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Basil leaves - 2 cups
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Potatoes - 1.5 pounds, cut into 1-inch pieces

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the potatoes with the olive oil, salt, and pepper. Spread out on a baking sheet.
  3. Roast the potatoes for 25-30 minutes, or until golden and crispy.
  4. While the potatoes are roasting, make the pesto. In a food processor, combine the basil, garlic, pine nuts, Parmesan, and lemon juice. Process until smooth.
  5. Toss the roasted potatoes with the pesto until well coated.
  6. Serve the potatoes warm.
