Swiss Chard Pesto

This vibrant and flavorful Swiss chard pesto is a delicious twist on traditional pesto. It's packed with nutrients and perfect for pasta, sandwiches, or as a dip.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 1/2 cup
  • Lemon juice - 2 tablespoons
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Basil leaves - 1 cup
  • Swiss chard - 1 bunch, stems removed

Instructions

  1. Bring a pot of salted water to a boil. Add the Swiss chard leaves and blanch for 1 minute. Drain and rinse with cold water.
  2. In a food processor, combine the blanched Swiss chard, basil leaves, garlic, pine nuts, Parmesan cheese, lemon juice, salt, and pepper. Pulse until well combined.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the Swiss chard pesto to a jar or container and refrigerate until ready to use.
  6. Serve the Swiss chard pesto with pasta, spread it on sandwiches, or use it as a dip for vegetables.
